Organic Lettuce Wraps

All Organic INGREDIENTS:

Serves two

  • 2 very ripe avocados
  • 3 tomatoes, diced
  • 1/2 jalapeno pepper, diced
  • 2 tbsp yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • kernels from one ear raw organic corn
  • 2 tsp fresh lime juice
  • 6-8 large romaine lettuce leaves

PREPARATION:

In a medium sized bowl, mash the avocado.

Add remaining ingredients and stir until well mixed.

Spread 2-3 tablespoons of this mixture onto lettuce leaves and wrap. Enjoy!  

 

Turmeric, Mango, Coconut & Maca Smoothie 

All Organic Ingredients.

Makes 2 cups

  • 1 cup coconut milk (choose from sweetened, condensed, or unsweetened)
  • 1 ripe banana
  • ½ cup diced mango
  • 1 tbsp coconut oil
  • 1tsp Tumeric
  • ½ tsp cinnamon
  • ½ tsp peeled and chopped ginger
  • 1 tsp chia seeds
  • 1 tsp maca powder
  • ½ avocado

To serve:

  • A handful of sunflower seeds
  • A few mint leaves
  • Ice

Instructions

  1. Add all the ingredients into a vitamix or similar blender, and blend for a few minutes – until smooth and creamy.
  2. Pour into two glasses with ice, and sprinkle over the sunflower seeds.
  3. Decorate with mint leaves, serve and enjoy!

 

Organic Black Bean Soup

*For Vitamix type blender

Ingredients

  • 3 cups (720 ml) low sodium vegetable broth
  • 1½ cup (315 g) black beans, cooked, rinsed, drained
  • 1½ cup (360 g) chickpeas, rinsed, drained
  • ½ cup (80 g) onion, sautéed
  • 3 garlic cloves, roasted
  • 3 Tablespoons lime juice
  • 1 jalapeño, seeded, quartered
  • 1 teaspoon ground cumin
  • ¼ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • ¼ cup (35 g) red bell pepper, stemmed, seeded, diced

Directions

  1. Place broth, ¾ cup (155 g) beans, chickpeas, onion, garlic, lime juice, jalapeño pepper, and seasonings into the Vitamix container in the order listed and secure lid.
  2. Select the Hot Soups program, or Variable 1.
  3. Turn machine on and allow the machine to complete the programmed setting, or slowly increase speed to High and blend for 6-7 minutes or until heavy steam escapes from the vented lid.
  4. Reduce speed to Variable 4 and remove the lid plug. Add peppers and reserved ¾ cup (155 g) beans through the lid plug opening.
  5. Blend for additional 10 seconds. Serve immediately.

Organic Sweet Potato Soup

  • Make in a Vita-Mix type blender.

Ingredients

  • ¼ onion, peeled, diced
  • olive oil
  • 1 sweet potato, baked, peeled
  • ½ apple, seeded, cored
  • 1 carrot, halved
  • 1 vegetable bouillon cube
  • 1½ cup (360 ml) water

Directions

  1. In a saucepan, sauté onion in olive oil for 5 minutes or until tender.
  2. Place all ingredients into the Vitamix container in the order listed and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase to the highest speed.
  5. Blend for 5-6 minutes or until heavy steam escapes from the vented lid. Serve immediately.

 

Organic Curried Carrot Soup 

Ingredients

  • 6 carrots, halved
  • ½ cup (80 g) onion, peeled, diced
  • ½ cup (120 ml) Almond Milk
  • 1 teaspoon curry powder
  • ⅛ lemon, peeled
  • salt and pepper, to taste
  • 2 cups (480 ml) vegetable broth

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 6 minutes or until steam escapes through lid. Serve immediately.


Triple Berry Smoothie

Yield:

3 cups (720 ml)

Ingredients

  • ½ cup (120 ml) water
  • ½ cup (120 g) low fat vanilla coconut yogurt
  • ½ cup (85 g) red grapes
  • ½ cup (75 g) frozen strawberries
  • ½ cup (75 g) frozen blueberries
  • ½ cup (60 g) frozen raspberries

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 1 minute or until desired consistency is reached, using the tamper to press the ingredients into the blades.

 

Detox Spinach Green Smoothie

Organic Ingredients

  • 2 bananas
  • 1 apple
  • 1 cup young spinach leaves
  • 1 lime (or orange, lemon)
  • water as needed

Instructions

  1. Peel bananas and apple, cut into slices and put into a blender. Wash spinach leaves and add to blended. Squeeze juice of 1 lime (can be replaced with orange or lemon) into the blender. Add water as needed.
  2. Blend until smooth and serve.

 

Hide your Kale Smoothie (Minimalist Baker)

Organic Ingredients

  • 1medium ripe banana (previously peeled, sliced and frozen // 1 banana yields ~3/4 cup)
  • 1/2cup frozen mixed berries (or sub blueberries)
  • 1heaping Tbsp hulled hemp seeds (organic if possible)
  • 2cups frozen or fresh kale (any kind)
  • 2/3cup 100% pomegranate juice
  • 3/4-1 1/2cups filtered water

Instructions

  1. Add all ingredients to a blender and blend until smooth, adding more water as needed. Taste and adjust flavors as needed. Add more banana or some agave for added sweetness.
  2. Serve immediately – enough for 2.

 

My Favorite Green Smoothie (Minimalist Baker)

Organic Ingredients

  • 1medium banana (previously peeled, frozen and quartered)
  • 1/2cup mixed frozen berries
  • 1Tbsp flaxseed meal
  • 1heaping Tbsp natural peanut butter*
  • 1/2 - 3/4cup unsweetened vanilla almond milk
  • 2cups fresh spinach

Instructions

  1. Place all ingredients in a blender and blend until creamy, adding more almond milk or frozen berries (or bananas) to thin/thicken, respectively. Serve immediately or freeze to enjoy later. Although it is best when fresh.

 

*You can substitute Organic almond butter or any organic nut butter instead of peanut butter.

 

Spring Detox Smoothie (Hello Glow)

Organic Ingredients

  • 1 cup green tea, chilled
  • 1 cup loosely packed cilantro
  • 1 cup loosely packed organic baby kale (or another baby green)
  • 1 cup cucumber
  • 1 cup pineapple
  • juice of 1 lemon
  • 1 tablespoon fresh ginger, grated
  • 1/2 avocado

Instructions

  1. Place ingredients into a blender and puree until smooth.

 

Green Smoothie (Ifoodreal)

Organic Ingredients

  • 3 cups water
  • 3 cups mango, frozen
  • 4 cups spinach
  • 2 cups kale, coarsely chopped

Instructions

  1. In a powerful blender, add ingredients in the order listed above (don’t change): water, mango, spinach and kale. Press “smoothie” button or blend until smooth. I like to blend more after “smoothie” cycle for a super smooth smoothie. If your blender isn’t powerful enough, just pause, stir and blend more.
  2. Enjoy! What I love about this smoothie is that it doesn’t separate much and tastes delicious even the next day.

 

Green Breakfast Smoothie (TheEndlessMeal)

Organic INGREDIENTS

  • 2 cups spinach or kale leaves
  • 2 cups pineapple
  • 1 medium banana
  • 1/2 an apple, cored
  • 2 tablespoons hemp hearts, flax seeds or chia seeds.
  • 2 cups water

INSTRUCTIONS

  1. Put all ingredients in a high powered blender and blend for 1 minute.
  2. Drink up your yummy greens!

 

Vegan Detox Green Monster Smoothie (Ambitious Kitchen)

Organic INGREDIENTS

  • 3/4 cup frozen strawberries.
  • 1/2 cup cucumber, peeled and sliced
  • 1 large frozen banana, broken into pieces
  • 1 1/2 cup vanilla almond milk (or alternate milk)
  • 1 1/2 cups kale, loosely packed, stems removed (you can also use spinach)
  • Large handful of spinach

INSTRUCTIONS

Add the almond milk to a high-power blender and toss the banana pieces and kale in. Blend on high. Add the strawberries and cucumber. Blend again until smooth. Add in more almond milk and/or ice for desired consistency.

 

Green Warrior Protein Smoothie (Oh She glows)

Organic Ingredients:

  • 1/2 cup (125 mL) fresh red grapefruit juice
  • 1 cup (25 g) destemmed dinosaur/lacinato kale or baby spinach
  • 1 large sweet apple (200 g), cored and roughly chopped
  • 1 cup (130 g) chopped cucumber
  • 1 medium/large stalk celery (85 g), chopped (about 3/4 cup)
  • 3 tablespoons (30 g) hemp hearts, or to taste
  • 1/3 cup (55 g) frozen mango
  • 2 tablespoons (4 g) packed fresh mint leaves
  • 1 1/2 teaspoons virgin coconut oil (optional)
  • 4 ice cubes, or as needed

Directions:

  1. Juice a red grapefruit and add 1/2 cup grapefruit juice to the blender.
  2. Now add the kale (or spinach), apple, cucumber, celery, hemp, mango, mint, coconut oil (if using), and ice. Blend on high until super smooth. (If using a Vitamix, use the tamper stick to push it down until it blends). You can add a bit of water if necessary to get it blending.
  3. Pour into a glass and enjoy immediately! This makes enough for a large glass with some leftover so you can also divide it into two servings and save one for later.

Strawberry Pomegranate Green Smoothie (pretty little apron)

Organic Ingredients (pink layer):

  • 1 frozen banana
  • 1 cup frozen strawberries (or fresh!)
  • 1/2 cup coconut water (from a can of coconut milk, cream skimmed)
  • 1 cup fresh spinach
  • 1/2 frozen banana
  • 1/4 cup pomegranate arils
  • 1/4 cup coconut water (from a can of coconut milk, cream skimmed)

Instructions

  1. Mix all ingredients together and enjoy!

 

The best Green Smoothie (PinchofYum)

Organic INGREDIENTS

  • 1 cup frozen mango chunks
  • 1/2 cup frozen peach slices
  • a handful of kale(stems removed)
  • 1–2 cups almond milk
  • 1/2 inch slice of fresh ginger
  • sprinkle of cinnamon

INSTRUCTIONS

  1. Blend until smooth!
